Berry Yogurt Dessert Recipe

This is a satisfyingly cool, creamy, fruity dessert for a hot Summer day...or any day!

Everyone in my house has a sweet tooth. Don't get me wrong...we have a savory tooth as well...but we love to indulge in desserts. More often than we should!


A few years ago I started making a yogurt dessert which turned out to be a big hit, especially with my son, Kaamil.


I know you may be thinking, how sweet and decadent can a yogurt dessert be? Well it's pretty delicious with creamy, tooth achingly, sweetened condensed milk added to it! But then what isn't good with condensed milk? I could eat it right out of the can!


You need to start preparing this dessert a day before you want to eat it because the yogurt needs to be hung overnight to drain out all the whey and become super thick.

TOTAL TIME

20 Minutes (Plus overnight straining of yogurt)

INGREDIENTS

•  3 cups full fat plain yogurt
• 1 can full fat sweetened condensed milk or more to taste
• 1 cup frozen mixed berries, thawed

METHOD

  1. Place a strainer in a large deep bowl so the strainer is hanging and not hitting the bottom of the bowl.

  2. Place a tea towel or cheesecloth in the strainer with it hanging over the sides of the bowl.

  3. Put yogurt in the strainer. Gather the tea towel or cheesecloth and tie it with a string or rubber band or plastic clip.

  4. Let this hang overnight in the fridge.

  5. Before serving, put the thick block of yogurt in a large bowl. Mix in the sweetened condensed milk tasting along the way to see if you want more.

  6. Gently fold in berries to get streaks of red and purple throughout the white creamy yogurt.

Tips and Bits

You can serve this with chunks of fresh fruit instead of frozen mixed berries or in addition to the frozen mixed berries. Fresh chunks of mango or fresh berries work well.


You can top this with crunchy granola, nuts and seeds for breakfast or a mid-day snack.
