Breaded Chicken Fillets Recipe

The best part of this chicken is it's so versatile. Its great as it is but you can also make chicken parmesan, wraps or eat it sandwiched in between a soft bun.

I started making this chicken many years ago when my kids were little and loved chicken nuggets. I thought this would be a healthier option and an acceptable substitute for my very picky eaters. Fortunately, it was!

You will need to prepare this well before you want to eat it because the chicken breast fillets will need to be marinated.

My daughter, Nursel, loves this chicken and in our house we refer to it as Nursel's chicken. She enjoys this with french fries but it tastes just as yummy with mashed potatoes or steamed veggies.

INGREDIENTS

  • 2 kg/4lbs boneless chicken breast fillets

  • 1 bottle hot sauce (I use Nando’s Extra Hot)

  • Breadcrumbs or Cornflakes

METHOD

  1. Marinate chicken in bottled sauce for 2 hours or overnight.

  2. Dredge chicken fillet in flour shaking off excess.

  3. Dip each chicken fillet in beaten egg.

  4. Coat chicken fillet in crumbs.

  5. Heat oil in frypan and fry chicken until golden brown.

Tips and Bits

These chicken fillets can be frozen on a cookie sheet. Separate them with wax paper or plastic wrap. When frozen, store in freezer bags.

You can use any bottled sauce you like or just salt and pepper to season.
