Corn and Cheese Croquettes Recipe

These crispy corn and cheese croquettes are a perfect appetizer or snack. I avoid store bought frozen foods and always make snacky bits and bobs to stock my freezer.

These are quick and easy to make with simple ingredients. I  freeze the croquettes on a flat tray or plate before storing in freezer bags. I let them thaw out a bit before frying them perfectly, golden brown.

INGREDIENTS

  • 2 potatoes, boiled and mashed

  • 2 cups corn

  • 1 cup full fat cream cheese

  • 1 cup full fat sharp cheddar cheese, grated

  • 1/4 teaspoon salt or to taste

  • 1/4 teaspoon black pepper or to taste

  • 2 eggs, beaten

  • Breadcrumbs or Panko

METHOD

  1. In a large bowl, mix cooled, mashed potatoes, corn, cream cheese, cheddar cheese, salt and black pepper.

  2. Shape croquettes, dip in egg and roll in breadcrumbs.

  3. Fry or freeze for later.

Tips and Bits

You can add your favorite herbs and spices to this simple recipe. Some good options are fresh coriander, fresh mint, spring onions, green chilies, red chili flakes.
