Easy Chicken Noodle Soup Recipe

Is there anything more comforting than a steamy bowl of chicken noodle soup? I love soup and chicken noodle has been one of my favorites since childhood.

I always have homemade chicken broth in my freezer which makes cooking this soup super quick. Don't worry if you don't have homemade broth on hand, this soup will be just as delicious with store bought broth.


I used to eat Campbell's chicken noodle as a child but this chicken noodle soup recipe is so much better because you can control the salt content and use less doughy, more delicate noodles.


I've used chicken breast but you can use any part of the chicken you prefer. This soup is all the medicine you need when you're down with a cold or flu. It's also perfect for lunch with some crusty bread or saltine crackers.

INGREDIENTS

  • 5 cups chicken broth

  • 1 tablespoon butter

  • 1 teaspoon olive oil

  • 2 cloves garlic, finely chopped

  • 2 chicken breasts, cut into small cubes

  • 1 carrot, peeled and cubed

  • 1 celery stalk, peeled and cubed

  • Salt to taste

  • White pepper to taste (optional)

  • 1/2 cup thin noodles

  • Few sprigs of fresh thyme or parsley, chopped (optional)

METHOD

  1. In a large pot, heat broth on low heat.

  2. In a frypan, heat butter and olive oil and sauté garlic on low heat for 2 minutes.

  3. Add chicken cubes and sauté for 5 minutes on low heat.

  4. Add carrots and sauté for 2-3 minutes.

  5. Add celery and sauté for 2-3 minutes.

  6. Add salt and white pepper (optional).

  7. Put chicken and veggies into the pot with the broth and mix.

  8. Add noodles and cook on low heat for 10 minutes until noodles are tender.

  9. Add chopped thyme or parsley (optional).

Tips and Bits

You can add any veggies you like in this soup.


If you prefer, you can use thicker noodles or egg noodles.


A squeeze of lemon gives this soup a tasty tang.
