Meatballs in Tomato Sauce Recipe

These meatballs are moist and flavorful, they are soft yet don't fall apart in the sauce and the best part...they are so easy to make.

We love pasta in our house and since I was never able to make good meatballs I always settled for ground meat, bolognese sauce.


I have had my fair share of dry, rubbery, hard meatballs... until this recipe. Yes, I think I've nailed it!


For the perfect meatballs you must have soaked bread as well as bread crumbs, eggs and a very gentle hand when mixing and forming the meatballs. Other than that, feel free to play around with your choice of herbs and spices or follow my recipe. Either way, you will not be disappointed!

INGREDIENTS

  • 1 slice white bread, crusts cut off

  • 1/2 cup full fat milk

  • 2 eggs, beaten

  • 1/4 cup bread crumbs

  • 1/4 cup Parmesan cheese, grated

  • 4 cloves garlic, finely chopped

  • A handful of parsley finely chopped

  • A handful of basil, finely chopped

  • 1 teaspoon salt or to taste

  • 1/2 teaspoon black pepper or to taste

  • 1/2 kg/1lb ground beef


For the Sauce

  • Olive oil

  • 2 cloves garlic, finely chopped

  • 2 cans tomato sauce, preferably Italian

  • 1/2 teaspoon salt or to taste

  • 1/2 teaspoon chili flakes or to taste

  • 1/2 teaspoon sugar

  • 1/4 cup Parmesan cheese, grated

METHOD

  1. In a small bowl, soak bread and milk and set aside.

  2. In a large bowl, mix eggs, bread crumbs, cheese, garlic, parsley, basil, salt, black pepper and soaked bread.

  3. Add ground beef and gently mix until just combined. Do not over mix or meatballs will be tough.

  4. Roll into small meatballs and chill in fridge until you make the sauce.

  5. In a large pan, heat olive oil and sauté garlic.

  6. Add tomato sauce, salt, chili flakes and sugar.

  7. Let sauce simmer then add meatballs.

  8. Cover and simmer for 20 minutes.

  9. Add cheese and gently mix.

Tips and Bits

You can use ground chicken for these meatballs.


You can gently fry your meatballs in a frypan before adding to the sauce if you want to add this step.


Add another can of sauce if you prefer more sauce.


You don't have to serve this with pasta. You can put meatballs and sauce in a soft sub sandwich and top with mozzarella or provolone cheese…Yum!
