Okra with Ginger and Sesame Seeds Recipe
This vegetable is an all-time favorite in my house and I cook it many different ways, so we don't get tired of eating the same dish over and over again.
I've posted an okra recipe on the blog but because I cook okra so much for my family I wanted to share another.
Okra is a simple and quick vegetable to cook. Please use fresh, slim okra and wash the okra before cutting to avoid a sticky mess. We love to eat this as a side to any Pakistani meal. It stays in the fridge for several days so we can enjoy leftovers for lunch or dinner.
Okra with Ginger and Sesame Seeds
1/2kg/1lb okra, cut into small circles
1 large onion, finely chopped
1 inch piece fresh ginger, slivered
1 tomato, finely chopped
1 green chili, chopped
1/2 teaspoon turmeric powder
1/2 teaspoon salt or to taste
1/2 teaspoon red chili powder or to taste
1 tablespoon sesame seeds
A handful of fresh coriander, chopped
In a large pan, heat oil and fry onions on medium heat until light brown.
Add ginger and sauté for a few minutes.
Add tomatoes and cook on medium heat until you have a paste.
Add green chili, turmeric powder, salt and red chili powder.
Fry on high heat for a few minutes.
Add 1/4 cup water and okra and cook on low heat, until tender.
Add fresh coriander and sesame seeds.
Tips and Bits
