Poached Pears With Chocolate Sauce Recipe

Dark chocolate sauce poured over poached pears is a perfect combination

I first ate this dessert at a dinner party about 27 years ago, shortly after I got married and moved to LA. I had never had such an elegant looking yet simple dessert that tasted so good!


I've made this recipe a few times over the years for small gatherings and it's been a big hit. It's quick and simple and the best part is the pears can be poached ahead of time and can be eaten warm, room temperature or cold.


Like so many of my recipes, this can be tweaked to your own taste so I recommend you give this a try. This light dessert is ideal after a heavy meal.

Poached Pears With Chocolate Sauce Recipe

INGREDIENTS

  • 4 pears (I use Anjou)

  • 1 lemon, juiced

  • 1/4 cup sugar

  • 100 gm bar dark chocolate (I use Lindt 70%)

  • 2/3 cup heavy cream or slightly more if you like a thinner sauce

  • 1 teaspoon butter

  • 1 teaspoon corn syrup (optional)

METHOD

  1. Peel pears and place in cold water with lemon juice.

  2. In a large pot, boil water and sugar—enough water to cover the four pears.

  3. Turn the heat low, add the pears and cook covered, for 30 minutes.

  4. Remove pears from liquid.

  5. With a sharp knife, chop the dark chocolate.

  6. In a microwave-safe bowl, heat the cream.

  7. Carefully add the chocolate to the hot cream and gently mix until thick and creamy.

  8. Gently mix in the butter and corn syrup (optional).

  9. Pour chocolate sauce over pears right before serving.

Tips and Bits

Use any variety of firm pears that you prefer.


After poaching the pears, slice a bit off the bottoms to make them stand up straight in your dish.


You can sprinkle these chocolate covered pears with roasted almonds or hazelnuts.


Tastes great with a scoop of vanilla ice cream.
