Rice Pudding Recipe

I have loved this cold, creamy, sweet dessert for as long as I can remember.

Rice pudding is a universal dessert that requires a few basic ingredients. Everyone around the world has their own way of making this comfort food. Mine is simple and sweet with a touch of cardamom and I'm sure you will love it.


This chilled dessert is satisfyingly delicious during the Summer heat. It's ideal for a crowd or a treat for your family.

1 Hour 30 Minutes

INGREDIENTS

  • 2 litre/1/2 gallon full fat milk

  • 1 1/2 cups rice, washed and ground

  • 3 cups sugar or more to taste

  • 8 cardamom pods, peeled and ground

METHOD

  1. In a large pot, let milk come to boil.

  2. Add rice, stirring continuously to avoid lumps.

  3. Turn heat low and cook for 1 hour or until rice is cooked.

  4. Add sugar and continue cooking for 30 minutes.

  5. Add cardamom powder.

  6. Cool to room temperature then chill in fridge.

Tips and Bits

I wash and dry rice then grind in spice grinder until grainy.


Keep heat low and keep stirring so the rice doesn't stick to the bottom of the pot and burn.


You can add nuts and raisins to this.
