Umm Ali Recipe
If you like bread pudding, you will love Umm Ali which is a traditional Egyptian dessert.
My husband and I fell in love with Umm Ali soon after we moved to Dubai, and it's still one of our favorite desserts 12 1/2 years later!
Unlike bread pudding, which is made with stale bread, Umm Ali is made with buttery, flaky puff pastry which takes it to another level of yum 😋. This is an easy recipe, so you don't have to wait for a special occasion to make it. Please give it a try when you feel like having something warm and comforting any day of the week.
Umm Ali Recipe
4 squares of puff pastry
2 3/4 cups full fat milk
1/2 cup sugar or more if you want it sweeter
2 tablespoons almond sticks, roasted
1 tablespoon pistachio sticks, roasted
1 tablespoon golden raisins
1 tablespoon ground coconut
1/4 cup heavy cream
Preheat oven to 220C/425F.
On a baking sheet, place frozen puff pastry with another baking sheet on top sandwiching the puff pastry between two baking sheets.
Bake 10-15 minutes until golden.
In a medium pot, boil milk for 15 minutes.
Add sugar and continue to boil another 10 minutes.
Break puff pastry into pieces.
In a medium bowl, add 1/2 the puff pastry pieces, 1/2 the milk, all the golden raisins, 1/2 the almonds, 1/2 the pistachios and 1/2 the coconut.
Add the rest of the puff pastry pieces and rest of the milk and sugar mixture.
Cover with remaining almonds, pistachios and coconut.
Pour the heavy cream evenly over the top.
Bake until light brown and bubbly. Cool for 10 minutes before serving.
Tips and Bits
You can make these with broken up palmiers if you don't want to bake puff pastry. If you are using palmiers, decrease sugar as palmiers are sweet.
Cinnamon or cardamom can be added to the milk while boiling.
