1 Hour

For the Syrup

  • 1 cup sugar

  • 1 cup water

  • 1 cup full fat evaporated milk

For the Crust

  • 2 cups flour

  • 1 teaspoon salt

  • 1/2 cup butter, cold, cubed

  • 1/4 cup shortening

For the Filling

  • 4 large, firm apples, peeled and cored

  • 1/4 cup butter, softened

  • 1 teaspoon cinnamon powder

  • 1 teaspoon vanilla

  • 1 egg, beaten

  1. Preheat oven to 180C/350F

  2. In a saucepan, boil sugar, water and evaporated milk until thickened and syrupy.

  3. Pour sauce into square baking pan and set aside

  4. In a large bowl, mix flour, salt, butter, shortening until you get crumbs. Add ice water a tablespoon at a time and gently mix the dough into a round. Do not knead the dough or crust will be tough. Cover with plastic and put in the fridge to chill

  5. In a small bowl, mix softened butter, cinnamon powder and vanilla until combined.

  6. Fill paste into cored apples.

  7. Roll out chilled pie crust into a large square. Cut into 4 squares.

  8. Wrap each apple in the square, carefully overlapping sides and sealing at the top.

  9. Place in square baking pan with syrup.

  10. Brush each dumpling with beaten egg. Poke a few holes in each dumpling.

  11. Bake until golden brown and apples are tender when poked.

Tips and Bits

You can add raisins or walnuts in the butter mixture to stuff the core of the apple.
