Banana Cake Recipe

This is one of those tender, sweet, banana-y cakes that makes you go "mmmm" after the first fork full.

I like to bake with almost- black bananas because they make this recipe so moist and flavorful.  It's an "any occasion" kind of cake that you'll want to make often for your family and friends. You don't have to frost it if you don't want to but I have a weakness for frosting, so for me, it's a must ðŸ˜‹


I bake this cake in a square baking pan. I like to make cupcakes from the little batter I have leftover. You can do this or you can bake this in a 9x13 baking pan. Either way, this cake is the best excuse to use up overripe bananas!

INGREDIENTS

  • 3 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon powder

  • 2/3 cup butter, softened

  • 1/2 cup sugar

  • 1/2 cup soft brown sugar

  • 1 teaspoon vanilla

  • 3  eggs

  • 4 overripe bananas, mashed

  • 1 cup Greek yogurt, whipped

  • 1/2 cup milk


For the Frosting

  • 1 cup cream cheese

  • 1/2 cup butter, softened

  • 1 teaspoon vanilla

  • 2 cups powdered sugar

  • 2 tablespoons walnuts chopped (optional)

METHOD

  1. Preheat oven to 180C/350F.

  2. Butter and flour baking pan.

  3. In a large bowl, sift flour, baking soda, salt and cinnamon powder and set aside.

  4. Cream butter, sugar and brown sugar until fluffy.

  5. Add vanilla and mix.

  6. Add one egg at a time, mixing after each egg, until incorporated.

  7. Add half the flour mix to the egg mixture and mix until just combined.

  8. Mix in bananas, yogurt and milk.

  9. Add the remaining flour mixture and mix until just combined.

  10. Pour batter into baking pan.

  11. Bake for 30 minutes or until a toothpick comes out clean.

  12. Cool completely before frosting.

  13. Beat cream cheese and butter until fluffy.

  14. Add vanilla and powdered sugar and beat until fluffy.

  15. Frost cake, sprinkle with walnuts (optional).

Tips and Bits

You can frost this with chocolate frosting if you prefer.


This cake freezes well without frosting.


Store cake in an airtight container.
