Beef Stroganoff Recipe

If you're looking for a hearty, savory and creamy dish to welcome in the Autumn season then look no further because I've got you covered with this easy beef stroganoff.

Beef stroganoff is quick and easy to prepare for a weeknight dinner.  All you need is a good quality cut of beef, lots of mushrooms and a few simple ingredients to whip up an impressive meal.


I've always had beef stroganoff on top of wide, buttered, egg noodles but since I could not find them in Dubai, I've used thin, egg noodles and I think I prefer them.


This satisfying one dish meal served with sour dill pickles will surely wow your family and friends, so please give it a try and let me know if you love it as much as I do!

Beef Stroganoff Recipe

INGREDIENTS

  • Olive oil

  • 2 tablespoons butter

  • 1 onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 2 cups mushrooms, halved (I used white mushrooms and cremini)

  • 1/2 kg/1lb beef, thinly sliced (I used sirloin strip steak)

  • 1 cup beef broth

  • 1 tablespoon Dijon mustard

  • 1 tablespoon dark balsamic vinegar

  • Salt to taste

  • Black pepper to taste

  • 1 cup full fat sour cream

  • A handful of fresh parsley, chopped

  • 2 teaspoons cornstarch mixed in 1/4 cup cold water to make a slurry ( to thicken sauce, optional)

METHOD

  1. In a large, flat skillet, heat olive oil and butter and sauté onions and garlic until soft.

  2. Add mushrooms and fry on medium heat for 5 minutes.

  3. Take onion and mushroom mixture out in a bowl and set aside.

  4. Add beef to pan and cook on high heat for 5 minutes.

  5. Take beef out in a bowl and set aside.

  6. Add beef broth, Dijon mustard, balsamic vinegar, salt and black pepper to the pan.

  7. Add onions mushrooms and beef back into the pan and cook on medium heat for 5 minutes.

  8. Turn off heat. add sour cream and parsley, mix well.

  9. If you want a thicker sauce, add the cornstarch slurry and mix well (optional).

Tips and Bits

You can try this with ground beef meatballs instead of beef strips which is a more cost effective option.


If you don't want to use beef, you can make this with strips of boneless chicken breast.


Use any variety of mushroom you prefer.
