Chewy Cocoa Brownies Recipe

If you grew up with boxed brownies like I did, then you are going to love these sweet, chewy, chocolatey brownies.

I love recipes that I can memorize and effortlessly put together. This delicious brownie recipe is just that. It has a handful of simple ingredients that you probably have stocked in your kitchen and it’s so quick and easy.


This is one of those recipes that you want to keep in your back pocket for school bake sales, to share with your neighbors or to satisfy an aching sweet tooth.

INGREDIENTS

  • 1/2 cup unsalted butter, melted

  • 3/4 cup sugar

  • 1/2 cup soft brown sugar, packed

  • 2 large eggs, room temperature

  • 1 tablespoon oil

  • 1 teaspoon vanilla extract

  • 1/2 cup cocoa powder

  • 3/4 cup flour

  • 1/2 teaspoon salt

METHOD

  1. Preheat oven to 180C/350F.

  2. Prepare a 8x8 baking pan with baking parchment and set aside.

  3. In a large bowl, add butter, sugar and brown sugar and mix with a hand mixer for a few minutes.

  4. Add eggs and mix well.

  5. Add oil and vanilla extract and mix well.

  6. Add cocoa powder and mix well.

  7. Set hand mixer aside and fold in flour and salt with a large spatula. As soon as flour and salt are incorporated, stop folding.

  8. Add batter to baking pan and bake for 25-28 minutes.

  9. Cool pan on cooling rack. Cut when completely cooled.

Tips and Bits

Spoon and level off cocoa and flour in measuring cup for accurate measurement.


Do not over mix once flour is added.


Every oven is different so check brownies at 25 minutes, you may need to bake a few more minutes.


I like to place my baking pan in the fridge as it’s easier to get cleaner cuts.


You can add a 1/2 cup of chopped walnuts or chocolate chips to this batter.
