Chicken and Bean Burrito Recipe
When I was expecting Nursel, I craved bean burritos all the time. They say you stop eating the foods you craved during pregnancy but I still enjoy a simple bean burrito.
I prefer homemade tortillas so when I have the time I make a batch that lasts me a few days. If you don't have the time or the inclination to make your own, feel free to use store bought tortillas.
This recipe is ideal for young adults to whip up a quick meal after school or work. It's a delicious lunch or dinner that can be stored in the fridge and reheated. The possibilities are endless so tweak my simple recipe and fill your burritos with whatever you fancy!
Chicken and Bean Burrito Recipe

INGREDIENTS
2 chicken breasts, cubed
Cooking oil
2 cloved garlic, finely chopped
1 tomato, chopped
1 packet burrito seasoning
1/4 cup hot water
1 can refried beans
4 flour tortillas, warmed
Cheddar cheese, grated (optional)
Jalapeño peppers (optional)
Avocado slices (optional)
Salsa to serve on the side (optional)
Sour cream to serve on the side (optional)
METHOD
In a medium pot, heat oil and sauté garlic for a few minutes.
Add chopped tomatoes and sauté for another few minutes.
Add chicken breast and fry on high heat for 5 minutes.
Add burrito seasoning and 1/4 cup water.
Cover and cook on low heat until chicken is tender.
Break up chicken, shredding it while cooking, with a wooden spoon.
In a small pot or microwavable bowl, heat refried beans, stir so they heat evenly.
Take one warm tortilla, spread refried beans, spread shredded chicken, sprinkle shredded cheese, jalapeños and avocado (optional) and roll into a burrito.
Tips and Bits
You can use Monterey Jack cheese or any cheese you prefer in place of cheddar cheese.
Chopped spring onions, chopped onions and Mexican rice are all tasty fillings for these burritos.
You can deep fry these burritos, being very careful to wrap well and place seam side in oil first. Make sure oil is not smoking or the tortilla will burn.
