Chicken Fajitas Recipe

If you love recipes with a few, simple ingredients that are so easy to put together for a deliciously wholesome meal, then look no further because I've got you covered!

Every Ramadan I try to come up with special dishes to treat my family at Iftar time. These tasty chicken fajitas are a big hit and I love that I don't have to be in the kitchen for hours.


I use a fajita seasoning packet but you can make your own seasoning if you prefer. I have a very good tortilla recipe up on My Instagram but you can use store bought tortillas too. The chicken and veggies are roasted on one baking sheet which makes this a no fuss meal.


This is the recipe to make on busy weeknights or lazy weekends. Leftovers reheat well too!

INGREDIENTS

  • 3 chicken breasts, sliced

  • 3 garlic cloves, finely chopped

  • 1 onion, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1/4 cup olive oil

  • 1 fajita seasoning packet

  • Tortillas, warmed


For the Toppings

  • Sour cream

  • Taco Sauce

  • Lemon wedges

METHOD

  1. Preheat oven to broil setting and move oven rack to the top.

  2. On a large baking sheet, mix chicken, garlic, onion, red, yellow, green bell peppers, olive oil and seasoning packet and set aside for 10 minutes.

  3. Broil for 10-15 minutes until chicken is tender and veggies are charred around the edges. Mix chicken and veggies once in the middle.

  4. Wrap in tortilla, add toppings and serve warm.

Tips and Bits

The chicken breast does not take long to cook through. Do not over cook or it will be dry.


Use any color bell peppers you prefer.
