SERVES

6

TOTAL TIME

1 Hour

INGREDIENTS

  • 1 kg/2 lbs ground chicken

  • 1 teaspoon garlic paste

  • 1 teaspoon ginger paste

  • 1 medium onion, finely chopped

  • A handful of fresh coriander, chopped

  • 1 green chili, chopped

  • 1 teaspoon salt or to taste

  • 1 teaspoon red chili powder or to taste

  • 1/2 teaspoon turmeric powder

For The Gravy

  • 1 large onion, thinly sliced, fried golden brown

  • 1 large tomato

  • 1/2 cup full fat yogurt

  • 1 teaspoon garlic paste

  • 1 teaspoon ginger paste

  • 1 teaspoon salt or to taste

  • 1 teaspoon red chili powder or to taste

  • 1/2 teaspoon turmeric powder

  • 2 green chilies

  • A handful of fresh coriander with stems

  • Oil for cooking

  • 1 teaspoon garam masala (optional)

METHOD

  1. In a large bowl, gently mix ground chicken, garlic paste, ginger paste, onion, coriander, green chili, salt, red chili powder and turmeric powder. You don't want to over mix or koftas will be tough and rubbery.

  2. Make koftas and set aside.

  3. In a blender, add fried onions, tomato, yogurt, garlic paste, ginger paste, salt, red chili powder, turmeric powder, green chilies and fresh coriander and mix to a smooth paste.

  4. In a large pot, heat oil, add paste from blender and cook on medium heat for 5 minutes.

  5. Add 2 cups water or more if you like a thinner gravy and cook on high heat until gravy is boiling.

  6. Gently drop in the koftas and cook, covered on low heat for 30 minutes until oil rises to the top.

  7. Add garam masala (optional).

Tips and Bits

You can make this with ground beef or lamb if you prefer.

Roast and grind spices for garam masala. Store in an airtight container.

You can freeze this curry in freezer bags or containers.
