Chinese Bread With Spring Onions and Sesame Seeds Recipe

This soft bread with spring onions and sesame seeds has been a favorite of mine for many years.

The first time I ate this bread was at a Chinese restaurant in LA and I really don't know why I never tried ages ago, to make it at home. It's surprisingly easy and quick with no preheating the oven because it's made on the stove.


I have made an addition of sesame oil because I think the fragrance and flavor compliments the spring onions perfectly.


I'll be making this in Ramadan to serve with a bowl of soup or to enjoy on it's own. No more waiting until I go to LA to enjoy this delicious Chinese bread!

Chinese Bread With Spring Onions and Sesame Seeds Recipe

1 Hour 40 Minutes

INGREDIENTS

  • 2 teaspoons sugar

  • 2 teaspoons instant yeast

  • 1 1/2 cups warm water, or slightly more

  • 4 cups flour

  • 1 teaspoon salt

  • 1 tablespoon cooking oil


To Form the Bread

  • 1 tablespoon sesame oil (optional)

  • 2 stalks spring onions, finely chopped

  • 2 tablespoons sesame seeds

  • 3 tablespoons cooking oil for frying

METHOD

  1. In a small bowl, mix warm water, yeast and sugar and set aside until foamy.

  2. In a large bowl, mix flour, salt, oil and the yeast mixture. Put on a flat surface and knead until dough is smooth and elastic.

  3. Place dough in bowl and over with oil. Cover bowl with plastic wrap or a tea towel and set aside to rise in a warm place for 40-60 minutes until the dough is doubled.

  4. Punch dough down and knead until smooth and elastic.
    With a rolling pin, roll out dough as thin as you can into a rectangle.

  5. Brush with sesame oil (optional) and sprinkle with spring onions.

  6. Roll the dough starting from the end closer to you, into a rope. Coil it into a flat circle.

  7. With a rolling pin, gently roll the dough coil into a circle that fits a 10" frypan.

  8. Brush with a little oil, sprinkle with sesame seeds and cover loosely with plastic wrap or a tea towel.

  9. Heat frypan with 3 tablespoons cooking oil

  10. Gently place bread in the frypan, with sesame seeds side down in the oil. Cover with the lid.
    Cook, covered on medium heat for 10 minutes until golden brown.

  11. Loosen the edges and carefully turn the bread over with a large spatula and cook, covered for another 10 minutes.

  12. Check to see if bread is done. Take out of frypan and cool on rack.

  13. Store in airtight container.

Tips and Bits

I cook my bread in a 10" skillet with a lid.


10 minute cook time on both sides is approximate depending on thickness of pan and heat level.
