Chocolate Chip Blondies Recipe

I love cookie bars and these moist, chewy blondies loaded with chocolate chips are great when you don't have time or are too lazy to make individual cookies.

I mix these beauties up in my Kenwood mixer but you could do the same with a hand mixer or by hand. I have been making these for years and thought it was time to tweak my recipe so I made these with self-raising flour instead of all-purpose flour, melted butter and an extra egg yolk for richness.


I'm telling you- this is a recipe you need in your life. It's quick and easy so if you have a craving for something ridiculously delicious make these chocolate chip blondies, I promise, you won't be sorry!

Chocolate Chip Blondies Recipe

INGREDIENTS

  • 1 cup butter, melted and cooled

  • 3/4 cup sugar

  • 1 cup brown sugar

  • 1 large egg, beaten

  • 1 large egg yolk

  • 1 teaspoon vanilla

  • 2 1/4 cups self-raising flour

  • 1 cup milk chocolate chips

  • 1 cup semi-sweet chocolate chips

METHOD

  1. Preheat oven to 180C/350F.

  2. Grease a 9x13 baking pan, cover with baking parchment and set aside.

  3. In a large mixer or mixing bowl, add melted butter, sugar and brown sugar. Mix on high speed for 2-3 minutes.

  4. Add eggs, egg yolk and vanilla and mix on low speed until just combined.

  5. Add self-raising flour, dark chocolate chips and semi-sweet chocolate chips and mix until just combined.

  6. Spread thick mixture in a baking pan and bake for about 20-25 minutes, check after 20. Do not over bake. Cool completely on a cooling rack before cutting. 

Tips and Bits

I like to pop the baking pan in the fridge once it's cooled to get cleaner cuts.


You need to keep these in an airtight container. I like to put wax paper between the layers.


You can add a 1/2 cup of chopped walnuts or pecan to this mix.
