Colorful Beet Salad Recipe

Crunchy, chewy, sweet and sour are the punchy flavors and textures you will experience in every bite of this gorgeous beet salad.

I ate this salad at a restaurant and fell in love at first bite. I have tried to recreate the recipe at home and I have to say, it is just as delicious as I remember.


Cooking the beets takes some time whether you boil or roast them. You can opt to use ready cooked beets, if you like. I cook several beets at one time and store them in an airtight container in the fridge to use for different recipes throughout the week.


This salad eats like a meal with a colorful, unique mix of veggies, fresh and dried fruits and creamy cheese cubes. The sweet and tangy dressing ties everything together beautifully.


Even if you are not a fan of beets, I urge you to try this salad, you may just look at beets in a whole new light! It’s quick and easy to prepare and looks so inviting.

Colorful Beet Salad Recipe

INGREDIENTS

  • 2 whole beets, cooked and cut into thick batons

  • 1 green apple, cubed

  • 3 dried apricots, sliced

  • 3 dried dates, sliced

  • 1/2 cup feta cheese, cubed

  • 2 cups tender greens (I use a mix of baby spinach, lettuce and rocket)

  • A handful of cherry or grape tomatoes

  • A handful of parsley leaves


For the Dressing

  • 2 tablespoons olive oil

  • 2 tablespoons pomegranate molasses

  • 1/2 teaspoon apple cider vinegar

  • 1 lemon, juiced

  • Salt to taste

  • Sugar to taste

METHOD

  1. In a large bowl, toss together the apples, apricots, dates, greens, tomatoes and parsley.

  2. In a small bowl, whisk together the olive oil, pomegranate molasses, apple cider vinegar, lemon juice, salt and sugar. Taste, if you want to add more salt or sugar.

  3. Before serving, top with the beets and feta cheese and drizzle dressing.

Tips and Bits

Be careful when working with beets as the color will stain.


Pomegranate molasses can be found in Middle Eastern grocery stores. You can store it for a long time in the pantry or fridge and is perfect to add sweetness and depth to marinades, dressings and drinks.


If the dressing is too thick you can thin it out with a few drops of water.
