Easy Bruschetta Recipe

I love bread and I love tomatoes, so it's only natural that bruschetta is one of my favorite foods.

Bruschetta is typically eaten as an appetizer, but I like it as a snack at tea time or even as a light meal. I avoid ordering this in restaurants because the bread is never as toasty as I like it, the tomatoes are never as fresh, and there's usually a lot of other, in my opinion, unnecessary toppings.


You will like the simplicity of this recipe. The most important things are good bread and ripe tomatoes.  This is quick and easy with minimal ingredients, so try my recipe or use it as a base to make your own customized bruschetta. Either way, you will love it!

Easy Bruschetta Recipe

INGREDIENTS

  • 2 tablespoons olive oil

  • 1 1/2 tablespoons dark balsamic vinegar

  • Salt to taste

  • Black pepper to taste

  • 1/2 teaspoon sugar (optional)

  • 2 tomatoes, seeded and diced

  • 1/2 loaf French baguette

  • Olive oil for drizzling

  • 1 garlic clove to rub on the bread (optional)

  • A handful of basil leaves

METHOD

  1. Preheat oven to 200C/400F.

  2. In a medium bowl, mix olive oil, balsamic vinegar, salt, black pepper and sugar (optional) until thick.

  3. Add tomatoes, mix and set aside.

  4. Slice baguette into thick slices.

  5. Brush each slice generously with olive oil on both sides and rub with garlic clove (optional).

  6. Place slices on a baking sheet or straight on the oven rack.

  7. Bake until golden brown.

  8. Cool slices for 5 minutes.

  9. Generously top with tomato mixture, with a slotted spoon, leaving juices behind.

  10. Sprinkle with basil leaves and serve.

Tips and Bits

Slices of parmesan cheese are a nice addition.


Sprinkle with chili flakes for some zing.
