Fish with Browned Butter Sauce Recipe

If you love butter then browned butter is going to knock your socks off! The toasted, nutty flavor of browned butter makes a simple fish fillet taste totally indulgent.

This is a quick and easy fish recipe that looks fancier than it is. Pan fried fish fillet, drizzled with a browned butter sauce is a delicious meal for lunch or dinner.


I use white fish fillets for this dish but any thin fillet will work wonderfully. I like this with simple roasted potatoes but any cooked vegetables or a salad would pair nicely, as well.

INGREDIENTS

For the Sauce

  • 1 cup unsalted butter

  • 1 large lemon, juiced

  • Salt to taste

  • Black pepper to taste

  • A handful of fresh parsley, chopped


For the Fish

  • 4 large white fish fillets

  • 1/2 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Oil for frying

METHOD

  1. In a saucepan, heat butter on low heat, occasionally swirling pan. You will see white bits at the bottom of the pan which will turn brown. Cook until butter is light brown with a nutty fragrance.

  2. Take off heat, strain through a fine sieve and set aside to cool, slightly.

  3. In a medium bowl, mix lemon juice, salt, black pepper, parsley and half the browned butter. Taste to see if you want to add any more of anything. You can save the remaining browned butter in a small jar in the fridge.

  4. On a plate, mix flour, salt and pepper. Dredge fish fillets on both sides.

  5. In a frypan, heat oil and fry fish fillets for 2-3 minutes, turn over and fry for another 2-3 minutes. Gently transfer to a platter.

  6. Drizzle the browned butter sauce all over the fish fillets and serve immediately.

Tips and Bits

Keep an eye on the butter while browning as it can burn quickly. As soon as you smell the nutty fragrance it’s time to take it off the heat and strain it into a bowl.


Browned butter can be stored up to 10 days and gently heated to use for just about anything.


You can use fresh or frozen fish for this recipe.


A minced garlic clove add to the browned butter sauce adds another layer of flavor.
