Parmesan Cookies Recipe
Yes, that's absolutely right, savory Parmesan cookies! We love tea in our house and we love tea time snacks. I came up with this simple, quick recipe one afternoon when I had no yummies to serve with tea and they were a hit!
I urge you to use good quality Parmesan Reggiano cheese and real unsalted butter.
These Parmesan cookies are also great to serve on a cheese platter or in a lunch box. Please bake a batch when you want something savory, sharp and cheesy. I know you will love them as much as I do!
Parmesan Cookies Recipe

INGREDIENTS
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon sugar
3/4 cup cold butter, cubed
1/2 cup parmesan cheese, finely grated
METHOD
Preheat oven to 180C/350C.
In a large bowl, sift flour, salt, baking powder and sugar.
Add butter, Parmesan cheese and mix until crumbly and just coming together.
Add a teaspoon or two of iced water and bring mixture together.
Chill for 20 minutes.
Roll out on a floured surface, cut with a small cookie cutter.
The rounds will be soft so carefully pick them up with a spatula and place on baking sheet.
Bake until just golden about 8 minutes.
Cool on a rack.
Tips and Bits
You can add a 1/4 teaspoon crushed red pepper for a kick.
I like to roll, cut and freeze these cookies on a flat tray until hard then store in a freezer bag for later.
Serve with jam, fresh fruit, soup or a cup of tea.
