Pecan Chocolate Bars Recipe

Don't wait for Thanksgiving or Christmas or a special occasion to make these. Treat yourself to them today and enjoy!

I'm a purest at heart especially with classic recipes like pecan pie. However, I never underestimate the power of chocolate! And, in these pecan pie bars chocolate really does make them blissfully better.


These bars are pretty simple to make and are ideal when you don't want a pie. They are easy to transport and you can store leftovers for several days.


Take note... please toast your pecans to bring out their nutty fragrance and robust flavor. The crust is easy peasy but if you are really pressed for time, use a store bought pie crust.

Pecan Chocolate Bars Recipe

INGREDIENTS

For the Crust

  • 2 1/2 cups flour

  • 1 teaspoon salt

  • 3/4 cup cold butter, cubed

  • 1 egg, beaten


For the Filling

  • 1 cup light corn syrup

  • 1/2 cup sugar

  • 2 tablespoons melted butter

  • 1 teaspoon vanilla

  • 3 eggs, beaten

  • 1 1/2 cups pecans, toasted, chopped and cooled

  • 1 cup semi-sweet chocolate chips

METHOD

  1. Mix the flour, salt and butter with a pastry cutter or your fingers until crumbly.

  2. Add beaten egg and combine.

  3. Add iced water a little at a time until dough comes together.

  4. On a floured surface roll out the dough and place in a jelly roll baking sheet.

  5. Chill for 1 hour.

  6. Preheat oven to 180C/350F.

  7. In a medium bowl, mix corn syrup, sugar, melted butter, vanilla, eggs, pecans and chocolate chips.

  8. Pour into chilled crust and bake for 45 minutes.

  9. Check after 30 minutes as every oven is different.

  10. Cool on rack before slicing with a very sharp knife.

Tips and Bits

These bars can be baked in any size pan.


You can use milk, semi -sweet or dark chocolate chips in this recipe.
