Potato and Ground Beef Cutlets Recipe
A mashed potato and ground beef cutlet is an old time favorite that both, adults and children cannot resist.
Fried, savory foods are irresistible during Ramadan and these fried cutlets with a crispy crumb are no exception. You can make these from scratch or make them, like I often do, when I have leftover mashed potatoes and ground beef.
This quick and easy recipe is a no fail crowd pleaser to serve as a snack, lunch or dinner.

INGREDIENTS
Cooking oil
1 onion, finely chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon salt
1 teaspoon crushed red chili flakes or red chili powder
1/2 teaspoon turmeric powder
1 small tomato, chopped
1 kg/1/2lb ground beef
A handful of fresh coriander, chopped
2 green chilies, chopped (optional)
3 large potatoes, cubed
1/2 teaspoon salt
2 eggs, beaten
Crushed Cornflakes, Breadcrumbs or Panko for coating
Oil for frying
METHOD
In a large pot heat oil and sauté onions until soft.
Add garlic paste, ginger paste, salt, red chili flakes, turmeric powder and tomatoes — sauté for a few minutes.
Add ground beef and fry on high heat for 10 minutes.
Turn heat low and cook, covered for 15 minutes. Ground meat should be dry. Add coriander and chilies (optional), set aside to cool.
In a large pot, boil potatoes until tender.
In a large bowl, mash potatoes with a potato ricer, masher or a fork until smooth and fluffy. Add salt and gently mix.
Take a little mashed potatoes in your hand and flatten, fill with 2 teaspoons ground meat, top with more mashed potatoes and form into a round, flat cutlet.
Dip in egg, coat in crumbs. I like to do this step twice. Dip in egg again and coat in crumbs again.
Shallow fry until golden and crispy on both sides.
Tips and Bits
You can make this with ground lamb or chicken if you prefer.
You can mix the mashed potatoes and ground beef together then make cutlets, crumb and fry instead of stuffing the ground beef in the mashed potatoes.
These taste good with ketchup, spicy green chutney or tamarind chutney.
