Roasted Potatoes Recipe
These gorgeous beauties are fluffy on the inside, crispy on the outside and extremely addictive!
Roasted potatoes are an easy and quick accompaniment to eggs, salads, roasts and stews. If you love potatoes — and really, who doesn't?? then this is going to become your go-to potato recipe.
I like to keep my potatoes simple but you can get creative and fancy them up with your favorite herbs and spices.

INGREDIENTS
3 large potatoes, peeled and cut into large chunks
Salt to boil potatoes
1/4 cup olive oil
1 teaspoon salt or to taste
METHOD
Preheat oven to 230C/450F.
In a large pot, add salt and boil potatoes until tender but not falling apart.
Drain water and let potatoes sit in colander for 10 minutes.
Shake colander to roughen up edges of potatoes. This is what gives a crispy exterior.
On a baking sheet, covered with baking parchment, spread potatoes.
Add olive oil and salt and gently fold.
Roast, uncovered until potatoes are brown and crispy.
Gently turn over once so they roast evenly.
Tips and Bits
You can add garlic, rosemary, thyme or black pepper.
Don't overcrowd baking sheet or potatoes will not brown evenly.
