Roasted Sweet Potatoes Recipe


Slightly sweet with a spicy kick and full of good stuff like fiber and vitamin A, these sweet potatoes will knock your socks off!

Sweet potatoes can be used in sweet and savory dishes which makes them so versatile. I love them topped with brown sugar and marshmallows and in this roasted version with a spicy, lip smacking drizzle.

Roasted Sweet Potatoes Recipe

1 Hour

INGREDIENTS

  • 2 large sweet potatoes cut into medium chunks

  • 2 tablespoons olive oil

  • 1 teaspoon salt


For the Dressing

  • 2 tablespoons butter, melted

  • 3 tablespoons spicy, chili sauce (I use Sriracha)

  • 2 tablespoons honey

  • 2 limes, juiced

  • A handful of fresh coriander, chopped

  • Salt to taste

  • Roasted sunflower seeds (garnish)

METHOD

  1. Preheat oven to broil setting.

  2. On a baking sheet, mix sweet potatoes, olive oil and salt and broil until tender and charred.

  3. In a small bowl, mix butter, chili sauce, honey, lime juice, coriander and salt to taste.

  4. Drizzle dressing on sweet potatoes and sprinkle with roasted sunflower seeds.


Tips and Bits

I have left the skin on but you can peel sweet potatoes before chopping.


You can use parsley instead of or in addition to coriander.


You can add roasted nuts or pumpkin seeds as garnish.


You can use lemon juice instead of lime juice, if you prefer.
