Shepherd's Pie Recipe

What could be better than a pie topped with creamy clouds of mashed potatoes?! Shepherd's Pie is a favorite family dish that I learned to make when I lived in London.

Shepherd's Pie freezes well so I like to make a big batch of saucy ground beef or lamb. I top one dish with the mash and bake it and freeze the rest without the mash for another day.


Please take your time sautéing the chopped onions, celery, carrots and garlic as it makes all the difference for a rich gravy. I know many recipes call for ketchup but I like to use tomato paste in this dish.

INGREDIENTS

  • 1 kg/2lbs  ground beef

  • Cooking oil

  • 1 tablespoon butter

  • 1 large onion, finely chopped

  • 2 stalks celery, peeled and finely chopped

  • 2 carrots, finely chopped

  • 4 garlic cloves, finely chopped

  • 2 tablespoons tomato paste

  • 1/2 teaspoon salt or to taste

  • 1/2 teaspoon black pepper or to taste

  • 2 tablespoons Worcestershire sauce

  • 1 heaped tablespoon flour

  • 1/2 cup water, you may need a little more

  • A few sprigs fresh thyme


For the Mashed Potatoes

  • 5 large potatoes, peeled and cut into large cubes

  • 1/2 teaspoon salt or to taste

  • 1/2 teaspoon black pepper or to taste

  • 1/2 cup butter

  • 1/2 cup full fat milk

METHOD

  1. In a large pan, heat oil and butter and sauté onions, celery, carrots and garlic until soft.

  2. Add ground beef and fry on high heat for 10 minutes.

  3. Add tomato paste, salt, black pepper and Worcestershire sauce and cook for 20 minutes.

  4. Add flour and water to get a thick sauce.

  5. Add a few sprigs of thyme and pour mixture in a  9x13 baking dish.

  6. Preheat oven to 200C/400F.

  7. In a large pot boil potatoes until tender.

  8. Drain and let sit in colander for 10 minutes.

  9. In a big bowl, push the potatoes through a ricer or mash them up with a masher or fork.

  10. Mix in salt, black pepper, butter and milk folding gently.

  11. Cover the ground beef pie filling with mashed potatoes, make jagged edges all over with the fork to get crispy bits when baked.

  12. Bake until evenly browned.

Tips and Bits

You can add shredded cheese to your mashed potatoes.


You can make this in ramekins for individual servings.
