Spicy Angel Hair Pasta Recipe

I think Italian food has got to be one of the best cuisines. I love that it looks and tastes great without being fussy and overly complicated to prepare. And…a carbivore like me can eat pasta and pizza every day!

La Taverna used to be our favorite Italian restaurant in Singapore. It’s no longer there but it used to be a homely restaurant with delicious food and for us, happy memories.


They served a simple, spicy, tomatoey, angel-hair pasta dish. This is a great dish to make on busy weekdays or lazy weekends when you just don’t have the time or desire to spend hours in the kitchen.


I like it as it is, but if you are not impressed with this vegetarian dish please feel free to toss in some sautéed shrimp or sautéed, cubed chicken breast.


I have tried to mimic the look and taste of this wonderful La Taverna pasta dish and I hope you enjoy it as much as I do.

Spicy Angel Hair Pasta Recipe

INGREDIENTS

  • 1 box of angel hair pasta

  • Olive oil

  • 4 cloves, peeled and finely chopped

  • 1 Thai chili, finely chopped (add 2 if you like more heat)

  • 8 tomatoes, peeled, seeded and chopped

  • 1/2 teaspoon salt or to taste

  • 1 teaspoon sugar

  • 1 tablespoon cold butter

  • 1/2 cup Parmesan cheese, grated

  • A handful of fresh basil leaves

METHOD

  1. In a large flat skillet, heat oil and sauté garlic for a few minutes being careful not to let it brown.

  2. Add Thai chili, tomato, salt and sugar.

  3. Cook on medium heat until tomatoes are cooked down into a thickish sauce.

  4. Take off heat, add butter and parmesan cheese, mix well.

  5. Boil pasta according to package directions.

  6. Drain pasta, reserving 1 cup pasta water.

  7. Mix pasta with sauce right before serving .

  8. Slowly add some pasta water while mixing.

  9. Garnish with a generous amount of parmesan cheese and torn basil leaves.

Tips and Bits

This dish has to be prepared right before serving


Be careful not to touch face or eyes while chopping chilies. Wash hands well with soap after handling chilies.


You can use 3 to 4 cans of good quality chopped tomatoes instead of fresh tomatoes. Whiz the canned tomatoes in the blender before cooking and reduce amount of salt in the recipe.
