Zucchini Lasagna Recipe
I love Italian food! This mock lasagna satisfies my cheesy, tomato-y, cravings for comfort food.
Zucchini ribbons replace the lasagna pasta sheets in this dish. Now, I’m not going to tell you that this tastes like pasta because it doesn’t. It tastes like a vegetable but it doesn’t have an overpowering taste and it takes on the flavors of what you put into it.
The delicious tomato sauce has ground chicken and there’s a generous amount of cheese which makes this look, smell, and taste like lasagna.
So, please do give this a try for a quick and easy lunch or dinner. You will love it!

Tips and Bits
You can also use ground beef or lamb in this dish.
Feel free to use more or less cheese.
Jazz things up with a generous sprinkle of crushed, red chili flakes.
